Peas? In a drink? Why yes, don’t mind if we do. Featuring green peas, citron vodka, and a touch of sugar, this drink is bright, slightly astringent and definitely earthy. We felt the need to try this right away. It pairs perfectly with the sultry weather and is definitely a change from most overly sweet summer drinks.
Spring Pea Cooler*
2 tablespoons fresh peas (or thawed frozen peas)
1 lemon wedge
1 teaspoon sugar
2 ounces citron vodka
Soda water (optional)
In a cocktail shaker, muddle peas, lemon wedge and sugar until peas are well mashed. Add ice and vodka. Shake until shaker is frosted on outside. Pour over crushed ice in a Collins glass. Garnish with a twist of lemon peel (optional). To give it a little extra sparkle, top with soda water!
