Creamy Collard Green Dip with Crispy Bacon and Jalapenos!

We successfully suppressed the urge to fry a dip today, but not to worry, we’re bringing you two recipes that are great for fall parties and are just as comforting as a deep-fried ball of cheese! Most of our creations this week have come from being inspired by family traditions or combinations we’ve experienced locally. Today’s first double dip idea came from a recent experience at The Five Spot in midtown. When our waitress informed us that they were trying out a brand new collard green dip, our eyes went wide with wonder. We HAD to try this creative take on the usual spinach dip app. We scraped the bowl clean and would have ordered more if they hadn’t already ran out within 2 hours of being open for dinner! (They will be featuring the dip on their new fall menu) What better way to celebrate the arrival of fall than with a warm, comforting, southern style dip with a little added kick from fresh jalapenos!

1 bunch collard greens, removed from rib and chopped
5 strips bacon
2 jalapenos, chopped
6 ounces sour cream
10 ounces cream cheese
1/2 pound white cheddar
1/2 pound jack cheese
1/2 cup Parmesan cheese
1 tablespoon butter
dash of vinegar
salt and pepper to taste

beforeMake It!

Preheat oven to 350 degrees. Boil 2 quarts of water in large pot. Add 2 strips of chopped bacon to the water along with 2 teaspoons of salt and 1 tablespoon of butter. Bring to a boil and continue boiling for 5 minutes. Add the collard greens and cook for 3-5 minutes. Meanwhile, cook the remaining 3 strips of bacon in a non stick frying pan until crispy. After excess oil has drained, chop into small pieces and set aside. In a medium bowl, mix in remaining ingredients, along with the cooked collard greens and bacon bits. Stir well to combine. Pour mixture into oven safe casserole dish and bake for 15 minutes. Sprinkle Parmesan cheese over the dip and continue to bake for an additional 5 minutes, or until top is bubbly. Plunge a tortilla chip into the warm, creamy dip and taste the burst of flavor from the fresh jalapenos, a nice crunch from the crispy bacon bits, and savory satisfaction from the flavorful collard greens!
