Cookoo for…Carrots?


We were struck by this drinks vivid orange color and fascinated by the use of carrot juice.  The Rabbit is a take on the Bloody Mary, with a slightly sweet and gingery note.  While the original recipe called for cilantro, and we did try it with cilantro (and we didn’t like the flavor), it was definitely better with a pinch of nutmeg.  It is refreshing and not too sweet.

The Rabbit

Buy It!

2 ounces dark rum
3 ounces carrot juice
2 teaspoons raw sugar
1/4 inch peeled fresh ginger
2 lime wedges
1 pinch nutmeg


Make It!

In a cocktail shaker muddle lime wedges, ginger, nutmeg and sugar together.  Add ice.  Pour rum and carrot juice over ice.  Shake until shaker is frosted.  Pour over crushed ice into a highball glass.  Garnish with a lime slice.
