Chamomile is a wonderful flower that has wonderful calming abilities. It is naturally sweet smelling and tasting. Adding it to a cocktail takes it to a new level. The sweet, slightly apple flavor is intensified by using a strong tisane, lemon juice adds brightness, the gin adds a pleasant piney flavor and honey adds a touch of sweetness. We loved this cocktail and will definitely be making more of it.
Cooling Chamomile Cocktail
3 chamomile tea bags
2 tablespoons honey
2 ounces gin
1/2 tablespoon fresh lemon juice
In a small bowl add chamomile with 1 1/2 tablespoons really hot water. Let steep for 1 minute, then add honey. Mash chamomile with a wooden spoon. Let cool slightly. Press on tea bags until a majority of the liquid is removed into the bowl. Add tea, gin and lemon juice to a cocktail shaker. Add ice and shake until shaker is frosted. Strain into a coup or martini glass. Garnish with a lemon peel.
