Bacon Blondie Bar with Sweet Maple Bourbon Glaze…AKA The Miss Piggy!

It’s a known fact that people put bacon in EVERYTHING. And, why not? It’s salty and savory and has a distinct flavor that makes you want to wrap yourself in a blanket and smile. To kick off our Brews and Baking week, we took a blondie bar recipe, incorporated LOCAL bacon (and eggs and pecans) from the Forsyth Farmer’s Market, reserved the grease and used it as part of our butter content for the recipe…AND we cooked the bacon until it was perfectly crisp and folded the tasty little bits into the batter…AND we added bourbon. This recipe calls for multiple blankets and a perma-grin. Get ready for some maple, bourbon, bacon deliciousness!

Bacon Blondie Bar with Maple Bourbon Glaze

Ms. Piggy Bars

1 1/3 cups all purpose flour1/2 teaspoon baking powder
1/8 teaspoon Bacon salt
1/3 cup butter, softened
1/3 cup reserved bacon grease
3/4 cup firmly packed light brown sugar
2 large eggs
2 tablespoons light corn syrup
1 1/2 teaspoons vanilla extract
5 strips crisp bacon, finely chopped
1 cup pecans (for topping)

Maple Bourbon Glaze

2 – 3 cups powdered sugar
1/8 cup maple syrup
1/8 cup dark corn syrup
1 teaspoon maple extract1 tablespoon bourbon

Make It!

Bacon Blondie Bar

Preheat oven to 350. Butter an 8-inch square baking pan. Cook the bacon until perfectly crisp, reserving the grease. Sift flour, baking powder, and salt into a medium bowl. Beat the butter and brown sugar in a large bowl with an electric mixer at high speed until creamy. Add a splash of bourbon. Add the eggs, corn syrup, and vanilla, beating until just blended. Mix in the dry ingredients and bacon. Pour the batter into the prepared pan, smoothing the top. Bake for 25-30 minutes, or until dry on top and almost firm to the touch. Do not overbake. Cool completely before cutting into bars.

Maple Bourbon Glaze

In a large bowl, combine powdered sugar, maple syrup, dark corn syrup, maple extract, and bourbon and mix with an electric mixer for 15-20 minutes or until it reaches a thick, glaze consistency. Add more powdered sugar if necessary. Cover the slightly warm bars with the delicious glaze, add pecans and enjoy!

We could only think of one beer that would pair so sweetly with this beautiful creation. The Kentucky Bourbon Barrel Ale is great for after dinner, before dinner, or during dinner sipping – but for perfection we suggest throwing a few back alongside our delicious dessert!
